Preheat oven to 350 degrees fahrenheit. Spray a 24 count mini muffin pan with non-stick spray.
In a bowl, mix together flour, cocoa powder, baking soda and salt. This is the dry mixture.
In a stand mixer, beat butter, brown sugar, sugar, until light and fluffy, around 3 minutes.
Add one by one, the egg, vanilla, and red food coloring. Mix well after adding each ingredient.
Slowly pour in the dry ingredients into the stand mixer bowl and mix slowly until its all mixed together.
Scoop the dough with an ice cream scoop into the muffin pan.
Bake for 11-13 minutes. Remove from the oven and push with the back of 1/2 tsp measuring spoon to make a well.
Creme Cheese Frosting
In the bowl of a stand mixer, beat butter and cream cheese until smooth. Mix in the powdered sugar and vanilla. Beat until everything is well combined.
