CARROT CAKE WITH CREAM CHEESE FROSTING

We are halfway to the 12th DAY OF CHRISTMAS CAKES!!!  Carrot cake and cream cheese, topped with sugar cookie geese!!!   Unique, pretty and delicious!!

Did you get it?  It’s a Geese cake topper for 6 Geese-a-laying!!  I love it when a recipe is simple and pretty!!  Making the cake is really easy and really fast.  But when I thought about the theme and how to make it unique, I was a little bit stumped.  So I search far and wide for cake toppers and found Sugar Cookie!!   This Sugar Cookie Recipe is fast to make and you can shape it to anything you like.  Oh and here’s where to find the Geese Cookie cutter!

Now when I say a recipe is simple, I mean it really really is very simple to make.  Oh, one tip about the carrot!  The recipe said grated carrot.  The first time I made Carrot cake, I grated the carrot and it took sooooo long!!  This time, I actually use my handy dandy chopper!! It worked like a charm!!

Here’s how to make the cake!  In stand mixer bowl, beat together eggs, oil, sugar and vanilla.

Mix in the dry mixture which has flour, baking soda, baking powder, salt and cinnamon.

Stir in carrots and mix again.

Pour into the prepared pan and bake for about 40-50 minutes.  While the cake is baking, you can go ahead and make the frosting.

After the cake is cooled, go ahead and cool the cake.  You can frost the cake any way you like.  This time, I used the back of the spatula to make the lines.

I love it!!  And the Geese cookie topper makes this cake really unique.

This is a great recipe if you want to make a cake in a hurry.  This recipe uses a 9×13 pan. If you were to make a stacked cake like this, you will need to double the recipe.  Have fun baking and eating this Carrot Cake with Cream Cheese Frosting!!

Carrot Cake
  1. Preheat oven to 350 degrees F. Grease and flour a 8 inch and 6 inch pan.
  2. In a medium bowl, mix together flour, baking soda, baking powder, salt and cinnamon.
  3. In a stand mixer bowl, mix together eggs, oil, white sugar and vanilla.
  4. Add the dry mixture and mix again.
  5. Stir in carrots. Pour into prepared pan 3/4 of the way in each pan. You'll have extra batter. Do not overfill.
  6. Bake in the preheated oven for 40 to 50 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  7. Cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.
Cream Cheese Frosting
  1. In a stand mixer bowl, mix together butter, cream cheese, confectioners' sugar and vanilla.
  2. Beat until the mixture is smooth and creamy.
  3. Frost the cooled cake.
