CRANBERRY WALNUT BARS

Cranberry, orange, and walnut!!  A great trio that will make your heart sing!!  Cranberry Walnut bar is the 9th recipe for 12 DAYS OF CHRISTMAS BAKING!!

 

 

I know I’m not suppose to have favorites, but out of all the recipes from the 12 DAYS OF CHRISTMAS BAKING, I have to say that this recipe is my favorite, hands down!!  I love this bars and I have made it many times.  I just love the tartness of the cranberries, the zing from the orange and the walnut just makes the texture even better.  You can have this for breakfast for dessert and really anytime!!  Did I say I love this bar already ??  🙂

One great thing about this recipe is easy clean up!!  With all the cooking and baking that we do during the holiday, easy clean up recipes is always a hit in my kitchen.  That means I can bake more treats!!  😛

Grab your 13×9 baking pan and line it up with aluminum foil.  Then lightly spray the foil with cooking spray.

 

 

While the oven is preheating, cream the butter sugar and orange zest.  Take your time and do it for about 3 minutes or until it’s light and fluffy.

 

 

After the butter is creamed, add the flour and baking soda.  You can combine the dry mixture in a bowl and then gently pour it int the mixer while it is on low-speed.

 

 

Then take off your bowl out of the stand mixer.  Add the Cranberries (Yum!!) and walnuts (Double yum!!) and mix it with your spatula.

 

 

Put the batch in the prepared baking pan.  Look at all those Cranberries peeking out of the dough!!

 

 

After about 45-50 minutes you will enjoy this delicious, crunchy and tart bars!!

 

 

Tips for making this CRANBERRY WALNUT BARS :

  • The orange zest is a must!  It will give some freshness to this bars and it’s a great match for the cranberries.
  • When spreading the mixture into the pan, your hand is the best tool to make the bars even.

Instructions
  1. Preheat oven to 350 degrees F. Line a 9x13 baking pan with aluminum foil and spray lightly with baking spray.
  2. In a small bowl, mix flour and baking soda.
  3. In a stand mixer bowl, combine butter, sugar, and orange zest until light and fluffy.
  4. Add eggs and vanilla and mix again.
  5. Add the dry mixture and mix again.
  6. Add the cranberries and walnut and mix with spatula.
  7. Pour into the baking pan and spread evenly.
  8. Bake for 45-50 minutes. Cool before cutting into bars
