MATCHA POUND CAKE

My oh my, what a sight!!  This Matcha Pound cake is a great company for your afternoon tea!!  So easy to make, with ingredients that you probably have in your pantry and fridge, and the matcha makes a unique recipe to add to your collection.  March is the month of all things MATCHA!! 

 

  

The Matcha is a marching in March!!  This month we are celebrating all thing Matcha by baking all thing Matcha.  And I just realized, March is when we celebrate St. Patrick’s Day!!  So this green Matcha Pound Cake is a perfect dessert, not just for your afternoon tea, but also for your St. Patrick’s celebration!!  It’s from different countries, but hey..  Dessert is an international language of love!!  ?????

Besides it’s unique flavor, Matcha is also a great green natural food coloring for your baking.  I use both, personally, but remember that whenever you use the natural ones, it will pick up the flavor of whatever you are using.   Have you ever tried using natural food coloring?  How did it go?

Now back to our Matcha Pound Cake.  It’s quick to make so if you want, you can make one for now and you can make another one to put in the freezer to have ready anytime you are serving tea!!  First, mix together the butter and the sugar until it’s light and fluffy.

 

  

Then add the eggs one by one, and don’t forget to mix thoroughly before you add each eggs. 

 

 

Then alternatively add 1/3 of the flour and 1/2 of the milk.  So it goes flour, milk, flour, milk and ends with flour.  Make sure that you scrape the bottom and sides of the bowl, so that everything is thoroughly combined.  

 

 

Now this is how you get the matcha into the pound cake.  Take 1 cup of the batter and mix it with the matcha powder.   Mix it together and this will be the matcha batter.

 

After your pour in the original batter, add dollops of the match batter on top of the cake.

 

 

Use a butter knife to swirl the matcha batter with the original batter.

 

    

After 50-60 minutes in a 350 F oven, here’s the beauty that you can enjoy!!  Oh, before you slice into it, remember to

  1. Preheat oven to 350 F. Grease a 8.5 x 4.5 loaf pan.
  2. In a medium bowl, mix together the flour, baking powder and salt. This is the dry mixture.
  3. In a stand mixer bowl, beat together butter for about 1-2 minutes.
  4. Add the sugar to the whipped butter. Cream the butter and sugar thoroughly with medium speed for about 5 minutes, until it is light and fluffy.
  5. Add the egg one by one and mix after each addition.
  6. Add 1/3 of the dry mixture, add 1/2 of the milk and mix. Repeat this step. Then finish with the rest of the flour. Scrape all the sides and bottom of the bowl and mix again.
  7. Take out 1 cup of the original batter and put it in a bowl. Mix in the matcha with the spatula. This is the matcha batter.
  8. Pour in the original batter into the loaf pan.
  9. Then add 6-8 dollops of matcha batter on top of the original batter. Use a knife to make the swirl on top of the original batter.
  10. Turn down the temperature to 340 F. Bake for 50 to 60 minutes until an inserted toothpick comes out clean.
  11. Put the loaf pan on a wire rack for 10 minutes then take out the loaf out of the pan. Cool before serving.
