SCONES

Top of the morning, guvna!!!  Can you guess what the theme of this month’s bake is? BRITISH !!  And what is more British than a Scone?!  This really easy-recipe-to-make will be a great addition to your breakfast collection!!

 

 

 

Why British month?  Well, just in case you haven’t heard, there’s a royal wedding coming up!  Prince Harry is going to marry Meghan Markle on May 19th and I thought what a way to celebrate the Royal Wedding than with baked goods!!

There are a lot of things to that I want to make for this British month.  So I thought let’s do a breakfast item, a pie and a cake. I’ll have a special treat that I will make but it will be a surprise.  I’m so excited to make them all!

This recipe is really simple but delicious!!  One important thing that needs to be done before you do anything else is to preheat the oven AND put in your baking sheet to heat up.  When the scones are baked on a hot pan, it will rise oh so beautifully!!  After that is done, prepare the flour, baking powder and salt in a medium-sized bowl.  This recipe will need a scale because it is in metric.  Most of British recipes will use a scale instead of measuring cups to measure its ingredients.

 

 

Heat the milk for about 30 seconds and then add the vanilla and lemon juice.  Set aside.

 

 

Into the dry mix, add the cubed butter and mix with your hands.  This is the same process like making pie dough.  Dry ingredients + cold butter = flakiness!!

 

 

Once it’s a breadcrumb consistency,  add the sugar.  Then make a well in the middle of the bowl and add the milk mixture.  You can use a fork to mix it until it comes together.

 

 

Lightly flour your surface with flour.   Put the dough on it and lightly flour the top.

 

 

Fold the mixture until it becomes a smooth dough.  Pat it until it’s about 4 cm thickness.

Now whenever I am going to cut dough with a cookie cutter, I like to make a flour corner.  It’s where I dip my cookie cutter so that it won’t stick to the dough!!

 

 

Push the cutter into the dough and set aside.  Mix the again and repeat the process again.   You will get a dozen scones.

 

 

Mix an egg and a tablespoon of milk in a small bowl.  This is your egg wash.  Brush it on top of the scones.

 

 

Carefully take out the heated baking sheet and put a sheet of parchment paper.  Put the scones on the baking sheet and bake for about 10 minutes.

 

 

And look at this tower of deliciousness!!!  I like to spread some strawberry jam.  My next project is to make my own clotted cream.  I’ll let you know when I have success with it!!

 

 

Tips for making Scones :

  • Don’t forget to heat the baking pan!
  • The butter has to be cold.  Most recipe uses room temperature butter but this one uses cold butter.  I like to cut mine in small cubes so it will be easier to mix together.
  • When adding the liquid mixture, use your fork and mix lightly.

Scones
A great baked goods for afternoon tea and the perfect match for clotted cream and jam.
Instructions
  1. Preheat oven to 425 degrees F.
  2. Put flour, salt and baking soda in a medium bowl and mix.
  3. Add the butter and rub with your fingers. until it reaches breadcrumb consistency. Add the sugar and mix.
  4. In a glass measuring cup, heat up the milk for about 30 seconds. Add vanilla and the squeeze of lemon juice, mix together and set aside.
  5. Put the baking sheet in the oven and let it heat up while you finish making the scone.
  6. Make a well in the middle of the dry mixture and add the milk mixture. Mix it together with a fork. When it's starting to come together, mix it with your hand and gather all the flour together.
  7. Lightly flour a clean surface. Dump the dough on top of it. Fold the dough 2-3 times and pat it into a smooth dough and about 4 cm thickness.
  8. Dip the 5 cm round cookie cutter into some flour and push into the dough.
  9. When you are running out of space in the dough, bring the dough together again and repeat step 7-8. You should have 12 scones.
  10. In a small bowl, mix together the egg and milk. Brush the top of the scones with the egg wash.
  11. Carefully put a sheet of parchment paper on top of the preheated baking sheet. Put the scones on the baking sheet. Bake for 10-12 minutes.
  12. Great with clotted cream and jam.
