VALENTINE PAVLOVA

A heart shaped dessert for your sweetheart!!!  Awwww…  The second recipe for VALENTINE month is Valentine Pavlova.  Sweet meringue, layered with strawberry whipped cream, and topped with fresh strawberries!!  Sweets for my sweets!!!

This dessert is one of my favorite dessert to make and eat.  It is delectable, smooth, crunchy, creamy and it has strawberries!!!  It checks a whole lot of boxes!!

You can make this dessert 2 ways.  First you can make the meringue and the strawberry whipped cream the day before.  On the day of the celebration, you can assemble and layer the meringue, whipped cream and strawberries.  Or you can also make this dessert the day of.  However, I would suggest to make the meringue in the morning so it has time to dry out.

Let’s start with the meringue.  This is so easy and simple to whip up.  In a stand mixer bowl, whip up the egg whites and salt until it becomes foamy.

Then add the cream of tartar until it becomes soft peak.

Add the fine sugar 1 tablespoon at a time.

Keep whipping until it becomes stiff peak.  Once you get stiff peak you can add the gel food coloring.

Prepare the baking sheet with parchment paper.  Dot the edges so that the parchment paper will not move when you pipe the meringue.  I use a template that I put under the parchment paper for my guide.

For this layered dessert, you will make 4 large hearts.  Bake for 1 hour and leave in the oven for 2 hours or overnight.

Making the strawberry whipped cream is really easy.  Add all the ingredients together, and whip until you get whipped cream.  Literally easy!!

Once the whipped cream is done, it is time to assemble!!

First put a layer of strawberry whipped cream on top of the meringue.

When the strawberry whipped cream covered the meringue, add the chopped fresh strawberries.

Look at all those layers!!!  Wouldn’t your loved ones be happy to eat this delicious desserts?!?!

Instructions
Meringue Heart
  1. Preheat oven to 300 degrees F. Trace a piece of paper to the shape of a circle. Put in on a baking sheet and line it with parchment paper.
  2. In a stand mixer bowl and using the wire whip, beat the egg whites and salt until it becomes foamy. Add cream of tartar and beat until soft peak form.
  3. While the mixer is in low speed, add the superfine sugar 1 tablespoon at a time until it's all mixed in. Keep mixing until the egg whites becomes a stiff peak form.
  4. Add the vanilla extract and pink gel food coloring and mix evenly. Use a spatula to scrape the sides to make sure all the colors are mixed in.
  5. Pour in a pastry bag and pipe it on top of the heart template.
  6. Bake for about 1 hour. Shut off the oven. Leave the meringues in the oven to dry out. After it's cooled, store in an airtight container.
Strawberry whipped cream
  1. In a stand mixer bowl, whipped together the heavy cream, powdered sugar and pureed strawberries.
  2. After it becomes stiff peak, add the vanilla extract and whip again. Be careful not to over whip.
  3. Assemble the pavlova starting with the meringue, then spread the whipped cream and top with fresh strawberries.
