BANANA BARS WITH CREAM CHEESE FROSTING

In the midst of all the sweets, we need fruits to balance it all out!  So for the 7th day (We’re past halfway!)of 12 days of Brownies and Bars, I am making Banana Bars with Cream Cheese Frosting!!  Anything with fruit is healthy!!!  😄

 

 

How fun is this?!?!  Banana bars with cream cheese!!  The recipe is very straightforward and easy to do.  Even though, it has 3 layers, it’s still really straightforward.  First the banana cake.  This is not a like a brownie or a blondie, but more like cake.  Even though it is a cake, but since you’re baking it in a 15x10x1 in baking pan, it’s going to be a bar.  Another great thing about this is it’s faster to make, faster to cool and it can also feed more people. The second part is the cream cheese frosting.  Just mix all the ingredients, butter, cream cheese, powdered sugar and vanilla extract, and voila!  You’ve got the frosting.  Now for the top, you have 2 options.  You can go with Banana Chips or you can go with nuts. It’s really up to you.  So not hard at all, right!!  

This recipe starts with the usual starters, butter and sugar.  In a stand mixer bowl, mix together the butter and sugar until the mixture is light and fluffy.  Then add in the eggs and vanilla extract. 

 

 

Add in the mashed bananas and then mix it again.

 

 

Add in the dry mixture of flour, baking soda and salt.  Mix it until it is just combined.  Be careful not to over mix it. 

 

Place it in a 15x10x1 baking pan.  Remember that this pan is not the usual size that is used for baking so make sure that you have the right size.

 

After it is baked for 20-25 minutes, let it cool completely before spreading the cream cheese frosting.  

 

 

After all the surface is covered in the cream cheese frosting, you sprinkle the banana chips pieces.  Or you can also sprinkle walnuts.  Just remember to roast the nuts in the oven for about 5 minutes in a 350 degrees oven.  

 

 

It’s so fun!!  And technically, it’s a fruit dessert!!  Ha!  Great banana bar, with delicious cream cheese frosting and topped with crunchy banana chips!!  You’ll go bananas!!

BANANA BARS
  1. Preheat oven to 350 degrees F. Grease a 15x10x1 baking pan with cooking spray.
  2. In a medium bowl, combine the flour, baking soda, and salt. This is the dry mixture.
  3. In a stand mixer bowl, cream together the butter and sugar until light and fluffy.
  4. Add in the eggs, bananas, and vanilla. Mix until combined.
  5. Pour in the dry mixture into the creamed mixture just until fully blended.
  6. Pour the batter to a greased 15-in. x 10-in. x 1-in. baking pan.
  7. Bake at 350° for 20-25 minutes or until a toothpick inserted near the center comes out clean. Allow it to cool in the pan.
CREAM CHEESE FROSTING
  1. In a stand mixer bowl, beat together the cream cheese and butter until fluffy.
  2. Add the powdered sugar and vanilla. Mix together until smooth.
  3. Spread the frosting evenly on the banana bars.
  4. Sprinkle the top with banana chips or walnuts.
