BUTTERSCOTCH BLONDIES

It’s that time of the year again!!!  I am so excited for 12 days of bakes and this year it’s the 12 Days of Brownies and Bars!!!!  The first day is filled with delicious Butterscotch Bars!!!  These bars might be squares but the taste is nothing but boring!!

Every year, I start the 12 days of bakes with excitement!!  One is because I get to try so many different recipes.  Some recipes are a hit but some needs some more TLC.  Another reason why I’m excited is because I have so many practice that I become confident in the bakes.  Malcolm Gladwell said that it takes 10,000 hours of practice to be an expert on something.  I am not there yet, but I know I’ve already used lots and lots of butter!!!  😁

We start with melted butter and brown sugar in a stand mixer bowl.  Make sure to take your time so that the brown sugar is really mixed in with the butter.  Then add in the eggs and vanilla extract.

Then fold in the flour and mix again.  Remember to scrape the sides and make sure not to over mix the batter.

Then it’s time to add those golden delicious chips!!!  I mean blondies are delicious but blondies with butterscotch just really brings it up a notch!   Pour it in an 8×8 pan and bake for 20-25 minutes.  Let it cool for 1 hour before you cut into it so that the blondies is set.

Eeeeekkk!!!  This is not the first time I see this picture but I’m still so excited!!!  So I divided it into 12 pieces.  I wouldn’t cut it any smaller because that means you will be eating a lot more.  I wouldn’t cut it any bigger because this really pack a punch.  But you know what?  Cut as your hearts desire!!!  It’s the holidays!!!  Just remember to share with friends and family!!!

  1. Preheat the oven to 350F degrees.
  2. Line an 8 x 8 inch (20x20 cm) pan with parchment paper, leaving an overhang around the edges.
  3. In a stand mixer bowl, mix together the melted butter and brown sugar until combined. Make sure that all the butter is not separated from the brown sugar.
  4. Add in the egg and vanilla extract and mix again.
  5. Mix in the flour and salt. Then using a spatula, fold in the butterscotch chips.
  6. Pour the batter into the prepared pan, and bake for 20-25 minutes until the top is just set and edges are beginning to pull away from the sides of the pan.
  7. Let cool in the pan until completely set - at least 1 hour.
  8. When ready to slice, lift the bars out of the pan using the overhang from the parchment paper/aluminum foil. Place on a cutting board and slice into squares with a sharp knife.
