BANANA BREAD

People of all ages love this Banana bread!!  It makes 2 loaves so you can eat one and in my case, I can freeze the other one to send to my college student!!!  BREAKFAST BREAD month gets yummier with the Banana Bread!!

Banana Bread.  I love it!!!  You can eat it as is, you can eat it by toasting it in the oven toaster, you can slather butter on top, or even better, swipe some butter and heat it up on a pan!!  Which one is your favorite way to eat a Banana Bread?

Another reason I love this Banana bread is it’s a one bowl recipe!  Less clean up!!  And in my book, that means I can more baking!!  The recipe of this banana bread starts with, of course, Bananas!!  Doesn’t it reminds you of the Minions from Despicable me?  It’s one of my favorite movie of all time!

Ok, back to the recipe!!  I like mashing my bananas in my stand mixer.  Oh and remember to have really ripe bananas.  If it’s not ripe, wait for another day to make sure that it will give out it’s natural sweetness.  Start mashing the bananas with lower speed first (Because if you start medium speed, there’ll be bananas flying everywhere!!  Trust me!!) then bring it up to medium until everything is mashed.  From here I usually measure the mashed bananas to make sure I have enough.  Add more if you need to.  Then add in the melted butter.

Then add the sugar, salt, baking soda, egg, and vanilla extract.

Add in your flour and mix until combined.  Just until and not too long so that you don’t overmix.

Divide it into 2 prepared loaf pan and bake for about 50 minutes to 1 hour.

Look at these beauties!!  I love making Banana Bread because it gives you amazing fragrance to your house!!  Especially when you open up the oven door!!  Amazing!!  I know you want to eat it right away, but patience is a virtue!!  I would let it cool for about 1 hour and enjoy it!

  1. Preheat the oven to 350°F (175°C), and butter 2 8x4 inch loaf pans.
  2. In a stand mixer bowl, mash the ripe bananas with a paddle attachment until completely smooth. Measure 3 cups of the bananas and put it back in the bowl.
  3. Stir in melted butter.
  4. Mix in the baking soda and salt and stir.
  5. Add in the sugar, beaten egg and vanilla extract and combine.
  6. Add the flour 1 cup at a time and combine until everything is mixed in.
  7. Divide the batter between the 2 loaf pans.
  8. Bake for 50 minutes to 1 hour at 350°F (175°C), or until a tester inserted into the center comes out clean.
  9. Remove from oven and let cool in the pan for 10 minutes. Then remove the banana bread from the pan and let cool completely before serving. Slice with a bread knife and serve.
