BLUEBERRY OATMEAL BARS

A great way to start your day!! Or any time of the day.   Delicious and nutritious breakfast or snack.  BARS month presents the Blueberry Oatmeal Bars.

Alrighty.  This is going to be one of the shortest post because this recipe is so simple to make!!  It’s very straightforward and it has ingredients that’s probably already in your pantry and fridge.

Oatmeal is one of the superfoods that are popular for breakfast.  It has great health benefits because it is high in fiber.  This health conscious ingredient is great for heart health, for controlling your blood sugar, it has anti-cancer properties, and it’s great for your digestion.  Here are the different kinds of oats.

  • Oat groats
    • I’ve never tried this before.  I saw that Bob’s Red Mill has this available.
  • Steel cut oats
    • Least processed oat.   I usually get this at Jamba Juice with some blueberry and brown sugar.  Yummm!!!
  • Stone ground oats
    • Smaller than steel cuts and referred as Scottish Oat.  Bob Red Mill also has this variety.
  • Rolled oats
    • I buy this at the store and cook for the family.  I usually put it on the stove and get ready and by the time I’m ready, the oatmeal is ready!!
  • Quick Oats
    • This one is processed and rolled into smaller flakes so it will cook faster.
  • Instant oats
    • Not a big fan of this.  It advertise about saving time, but it has less health benefits so it really does not make sense to use it.

I never knew about the first 3 of the oats until I made this post.  Things you learn when you’re writing a blog!!

Now for the recipe.  I cannot stress enough that this recipe is easy, uses ingredients that most household has, and it does not use any mixer.  Just plain ol’ elbow grease!!

Line your 9×9 pan with aluminum foil.  Make sure to over lap the sides so it will be easy to pick up.  Spray lightly with cooking spray.

In one medium bowl, add together the oats, flour, sugar, brown sugar, and salt.  Mix together and add the melted butter and egg yolk.  This is the oat mixture.

Set aside one cup of the mixture (this will go on the top of the blueberry) and press the rest into the pan.  Make sure that you pat it nice and even .

Mix all the blueberry layer ingredients in another bowl.

Spread the blueberry to make a nice even layer.

Spread the rest of the oat mixture on top of the blueberry.  Bake for 45-50 minutes in a 350 degrees oven.

Ta da!!!  After it’s cooled, cut it into squares with a sharp knife.  I should’ve taken the picture before I took a piece but I couldn’t wait!  ?

Instructions
  1. Preheat the oven to 350F degrees. Line an 8x8 baking pan with aluminium foil and make sure there is an overlay on the sides so it will easy to pick it up. Spray lightly with non-stick cooking spray.
  2. In a medium bowl whisk together the flour, oatmeal, granulated sugar, 1/4 cup brown sugar, and salt. Gently stir in the melted butter and egg yolk. Set aside 1 cup of the mixture.
  3. Press the remaining mixture into the bottom of the prepared pan. Make sure to make it nice and even.
  4. In another medium bowl mix together all the ingredients for the blueberry layer. Spoon over top of the base oatmeal cookie mixture in the pan.
  5. To the reserved 1 cup of oatmeal mixture, stir in the 1 additional tablespoon of brown sugar.
  6. Crumble the rest of the oatmeal mixture over top of the blueberry layer.
  7. Bake in the preheated oven for about 40-45 minutes or until you see the blueberries bubbling and the top crumble turning golden brown. If you used frozen berries, the bake time will be 50-55 minutes.
  8. Allow to cool fully to room temperature (at least 3 hours) before cutting into the bars.
