BOURBON BITES

They might be small but they pack a big punch!!  To the bourbon and cookie lover out there, here’s a new cookie recipe for you!!  Bourbon bites shakes up the 12 DAYS OF CHRISTMAS BAKING!!

 

 

The holidays are usually about the kids, but this time we are going to make the adults very happy. ?  Here is a cookie that is packed with richness from the chocolate and of course the Bourbon.  I am glad that I made them small, because, WOW, one bite is outrageously indulgent and amazing!

Now, for this recipe, I had to be a new Bourbon bottle.  I personally prefer wine (red blends to be precise) and so I had to find other use for the Bourbon.  Turns out, you can add bourbon to so many recipes.  Pies, Bread pudding, tart, pound cakes, cakes, mousse and so many other things.  I need to add “Bourbon Month” to my list!!  ?

When I say easy, I really mean this recipe is really easy to make!!  It’s just add, mix, chill, roll and bake.  But at the end, you’ll have a great cookie to enjoy!!  First in a stand mixer, combine the softened butter and the brown sugar.

 

 

Next, add the liquid gold (it is literally liquid gold!!  It’s liquid and it’s gold!!” into the butter mixture and mix again.  This will make the Bourbon lover very happy !!

 

 

Add the flour, cocoa powder and mini chocolate chips to the mix. After everything is combined, cover and chill the dough in the fridge for 2 hours.

 

 

With a 1 inch ice cream scoop, scoop the dough and roll it out into a ball.  Then roll the ball unto the crushed pecans.

 

 

Bake the balls in a 350 degrees F oven for about 8-10 minutes.   Cool it on the baking sheet for about 5 minutes.

 

 

In Indonesia, there’s an expression,”Kecil-kecil, cabe rawit” which loosely means,”It’s small, but  packs a big punch”. Go ahead and bake them.  You’ll see what I mean. ?

Bourbon Bites
It's a bite that packs a punch !! This bourbon bites is great for parties because it's fast to whip up and doesn't take a lot of ingredients.
Instructions
  1. In a stand mixer bowl, cream the butter and brown sugar until it's light and fluffy. Add the bourbon and mix again.
  2. Add the flour, cocoa powder, and chocolate chips to the butter mixture and mix again until combined. Cover the dough and chill in the refrigerator for 1-2 hours.
  3. Preheat oven to 350 degrees F. Line 2 baking sheets with parchment paper.
  4. With an ice cream scoop, shape the balls into 1 inch balls and roll in the pecans.
  5. Bake for 8 - 10 minutes. Cool at the pan for 5 minutes before moving it to wire rack. Store in airtight container.
