CRANBERRY ORANGE COOKIES

 

Imagine enjoying this cookie near the fireplace and drinking a cup of hot tea!!  The second day of 12 DAYS OF CHRISTMAS BAKING is the Cranberry Orange Cookies!!

 

 

Christmas flavors.  Most holidays have flavors that associates with them.  4th of July is all about Barbecue. Thanksgiving is pumpkin.  During Christmas, the fruits that usually fills the fresh produce shelves are cranberries!

You can use cranberries in many things.  You can use cranberry juice for your drinks that you can serve at parties.  You can use the fresh ones as decorations or in a pie.  You can use the dried ones in cookies such as this recipes or in muffins.  I just love how versatile it is!!

The recipe needs refrigeration so that it doesn’t spread, so you make sure you make the dough in advance.  The dough itself doesn’t take a long time to make and to chill and before you know it it will be done!!

First thing to do is to make the cranberry sugar mixture.  You can do this is in a food processor or a chopper like what I have.  You want to make a few pulses to cut the cranberry into small pieces.  But you don’t have pulverize it because you want it to still have a bite.

 

 

In a medium bowl, combine the sugar with the flour.

 

 

Add the cubed butter (COLD butter) into the bowl and mix together with either a pastry cutter or just use your fingers.

 

 

Once you have the flour mixture to pea sized crumble add the rest of the ingredients.  You’ll add the cranberry sugar mixture, vanilla extract, orange zest, and orange juice.

 

 

Put it all in the bowl and knead it all together.  It’s a really simple recipe!!

 

 

This is what it should looks like when everything is combined and comes together.

 

 

Separate the dough into to balls.  Roll one of the dough into a log.  Just keep rolling it back and forth until you have a log.

 

 

Wrap the log with a plastic wrap.

 

 

Here’s a trick that I learned from cookie baking.  If you want to keep the shape of the log round, you can use a used paper towel roll!  It will keep it round and won’t have a flat side.

 

 

Cut the cookies into 1/4 inch slices and bake away!!!  Your house will smell sooo good!

Cranberry Orange Cookies

Instructions
  1. In a food processor or a chopper, combine cranberries and 1/4 cup of sugar. Chop until the cranberries are in small pieces. You don't need to pulverize it.
  2. In a medium bowl, combine flour and 1/2 cup of sugar.
  3. Use a pastry cutter or by using your fingers, cut in butter. You want very fine crumbs. About pea sized mixture.
  4. Add in the cranberries and sugar mixture, vanilla extract orange zest and orange juice.
  5. Use your hands to knead the dough until it comes together and forms a ball. Work the dough until it comes together. The dough will be moist.
  6. Divide the dough into 2 balls. Shape the dough into a log about two inches in a diameter and wrap in plastic wrap. If you have an empty paper towel roll, put it inside the roll to keep its shape. Refrigerate for two hours or up to 72 hours.
  7. Preheat oven to 325F. Line a baking sheet with parchment paper and set aside.
  8. Cut slices of cookie dough about ¼ inch thick.
  9. Place cookies on baking sheet and bake for 12 to 15 minutes or just until cookies are set. Check the cookies at the 12 minute mark to make sure that it's not browning.
  10. Let cookies cool for several minutes on baking sheet before removing to cooling rack. Let cool completely.
