CLASSIC WHOOPIE PIE

Is it a cake, a cookie or a pie?  Well, one thing’s for sure, it’s delicious!!  June is the WHOOPIE PIE MONTH!  Let’s start with the Classic Whoopie Pie.

 

 

The Whoopie pie.  It is one of my son’s favorite treat and I love the reaction that I get from him whenever I make them.  He hugs me and he kisses me and when he took his first bite, he always closes his eyes and say “Mmmm .. Mom!!  This is sooooo good!!!”  How could I not make it for him?!? ?????

This dessert is Native to Pennsylvania.  There are many states that declares as the state origin, but it’s mostly known as an Amish dessert.  Now the whoopie pie is actually the official state treat of Maine.  It’s different that state dessert of Maine which is Blueberry Pie.  Did you know that each state has a state dessert or treat?  Go figure!!  

Now if you go to Pennsylvania, you won’t ask for a whoopie pie, instead, you will want to get a Gob.  So next time you go there, you will sound like a local and ask for a Gob!  

Let us start by sifting the flour, baking soda, baking powder, cocoa powder and salt.  I like to prepare my dry ingredients at the beginning of every baking.  That way, the process won’t be interrupted.

 

 

In a stand mixer, cream together the butter and sugar until it’s light and fluffy. 

 

 

Add the eggs, vanilla extract and buttermilk and mix again.

 

 

Gently add the dry ingredients to the mixer and mix until it is combined.

 

 

Now this batter is unique.  It’s not as runny as a cake batter yet it’s not as set as a cookie batter.  I’m going to call it a Cakie batter. 

 

 

With an ice cream scoop, scoop the batter onto a parchment-lined baking sheet.   Make sure to have enough space because the cookie will puff up.  

 

 

After 9-10 minutes in a 400 degrees oven, let cool on a wire rack.

 

 

Now, while the cookie is still baking, make the easiest marshmallow filling ever.  Put marshmallow cream, butter, powdered sugar, and vanilla extract in a stand mixer bowl and whisk for about 5 minutes.  Don’t forget to scrape the sides.

 

 

After mixing, you will have a delicious, fluffy as cloud filling.  I dare you not to have a taste!! ?

 

 

You want the cookie to be completely cooled before you add the filling or else the top cookie will do a slip and slide!!  Schmear the filling on to the bottom cookie.

 

 

Add the top cookie and voila!!!  Whoopie Pie!!!

 

Now this cakie (cake cookie) can be made ahead as long as you put the filling the day you are serving it.  Have fun making these Whoopie Pie!!

Instructions
  1. Preheat oven to 400 degrees F. Line baking sheets with parchment paper. Set aside.
  2. Sift together flour, cocoa powder, baking soda, baking powder and salt into a bowl. This is the dry ingredients.
  3. In a stand mixer bowl, cream together butter and sugar for about 3 minutes until it's light and fluffy.
  4. Add the eggs, buttermilk, and vanilla extract and mix again.
  5. With the mixer on low speed, gently add the dry ingredients. Mix again but be careful not to overmix. Using a spatula mix again and scrape the sides and bottom of the bowl.
  6. Use an ice cream scoop to scoop the batter onto the parchment paper. Space it 2 inches apart so it has room to expand.
  7. Bake for about 9-11 minutes. Cool on a wire rack
  8. Beat together butter, powdered sugar, marshmallow cream, and vanilla extract in a bowl with electric mixer at medium speed until smooth, about 5 minutes.
  9. Assemble by schmearing the bottom cookie with the fluff and top it off with another cookie.
