BANANA PEANUT BUTTER WHOOPIE PIE

Elvis would’ve been so happy!!! This is Elvis’ favorite sandwich and we are making Banana Peanut Whoopie Pie for WHOOPIE PIE month!!

? You ain’t nothing but a hound dog, crying’ all the time….  Or, ? Love me tender, love me true, all my dreams fulfill …. Or ? But I can’t help, falling in love with you….  Oh Elvis!!  So many great songs!!!  Which one is your favorite?   It’s hard, right!!  It’s like picking your favorite child, right???  I think my top favorite is Love me tender.  They just don’t make songs like this anymore!!  So sweet, so gentle, so loving and those lyrics just makes you weak at the knees!!!  So what does Elvis has anything to do with this week’s Whoopie Pie?  Well, this combination has been known to be a favorite of Elvis.   So why not make it in a whoopee pie version!!

In a stand mixer, mix together the butter, sugar and brown sugar.

Then add the eggs and vanilla extract and mix again.

Add the mashed bananas and then mix again.

Add the dry ingredients and mix again. There’s a lot of mixing’ going on isn’t there ?!?!?   ?

Place the cookies on parchment lined baking sheet.

Bake for 11-13 minutes until golden brown.  Let cool before tasting this delicious banana cookies!!

While you finished baking the rest of the batter, we can make the peanut butter frosting.  In your stand mixer bowl, mix together the softened butter and peanut butter.

Add the powdered sugar and mix again.

Then with the mixer on low speed, add the milk a tablespoon at a time.

Then sandwich away!!  Schmear the peanut butter frosting on the bottom of a cookie.

Then put the top cookies and ….

Whoop whoop Whoopie Pie !!!  A flavor combo that is fit for a King!!

This is Elvis' favorite duo!! Delicious peanut butter frosting sandwiched between 2 soft banana cookies.

Banana Cookies
  1. Preheat the oven to 350 degrees F. Line baking sheets with parchment paper.
  2. In a medium bowl, combine the flour, baking powder, baking soda and salt. This is the dry ingredients.
  3. In a stand mixer, cream butter, sugar and brown sugar until it's light and fluffy.
  4. Add the eggs and vanilla extract. Mix again.
  5. Add the mashed bananas and mix again.
  6. While the machine is in low speed, gently add in the flour and mix until just combined.
  7. Scrape the sides and bottom of the bowl so everything is mixed thoroughly.
  8. With a small ice cream scoop, drop the cookies unto the prepared baking sheet and space it apart.
  9. Bake for about 12-13 minutes until golden brown. Cool on wire racks.
Peanut butter frosting
  1. In a stand mixer, mix together butter and peanut butter.
  2. While the mixer is in low speed, add the powdered sugar 1 cup at a time. Be sure to scrape the sides and bottom of the bowl so everything is combined.
  3. Stir in vanilla extract and salt and mix again.
  4. While the mixer is in low speed, add the milk until it reached the right consistency.
  5. Spread the frosting into the bottom on one cookie and top it off with another cookie.
