APPLE SLAB PIE

Happy 4th of July!!!  Here’s a dessert that is easy to make and can feed a crowd!!  We start SLAB PIE month with the all American classic, Apple Slab Pie!!!

 

What’s more classic than Apple Pie??  When I was looking for the perfect 4th of July dessert, I had to go back to the tried and true classic, Apple Pie.  But I also wanted to celebrate 4th of July.  So I searched high and low and I saw this lady on Instagram.  Her name is Jessica aka the Pieous.   She has amazing art on her pies and she makes them really comes to life.  My favorite is Prince.  I love how vibrant the purple she has on the pie.  It makes you want to sing “Purrrrple rain, purrrrple rain ….”  Sing it everybody!!!  ??????  So she is the inspiration for this pie.  It’s the combination of the classic and the new!!  Classic pie flavor and a new way to decorate your pie.  

 

Now making a slab pie has the same components as the regular pie.  Make crust, make filling, fill crust and bake.  For slab pie, just double everything up!!  It’s just a matter of getting everything together and you get to feed a lot of people!!

 

Prepare all the ingredients for the pie crust.  As you can see from the photo, there’s the flour and salt in the bowl, and shortening, butter and ice water on the side.  Make sure that it’s not just cold water, but icy water. 

 

 

Cut the shortening and butter into little pieces and mix together with your fingers. 

 

 

Gently add the ice water little by little.  Mix again with your fingers until it becomes pea sized pieces.  Remember to add little by little because you can always add but you cannot take away!

 

 

Here’s your pie crust!  Easy right?!  Shape it into a disc.  It should be moist but not too wet. 

 

 

Cut the disc into 2/3 and 1/3 piece.  The 2/3 is for the bottom crust and the 1/3 is for the top crust. 

 

 

Roll out the 2/3 piece into a 17×12 rectangle.  

 

 

Here’s an easy way to move the pie crust unto the jelly roll pan.  Fold the crust in fold. Don’t crease the fold. 

 

 

Then fold again into quarters. 

 

 

 

Then gently lift it and put it onto the jelly roll pan. 

 

 

Then unfold it to cover the pan.  Cut off the excess with a sharp knife. 

 

 

Ta da!!!  Doesn’t this make you excited?!?!?!?  Now let’s chill this pie crust while we make the filling. 

 

 

The filling is very easy to do.  Mix the apples, sugar, brown sugar, sugar, salt, cinnamon, and lemon juice.  

 

 

Take out the chilled pie crust and pour in the apple filling.   Try to get the apples on an even layer.  It might take a little apple shuffling but it doesn’t have to be perfect.

 

 

Put pats of butter on top of the apples.  This keeps the apples moist.   Bake it for 30-35 minutes.  The apple should be nice and soft.

 

 

Take the 1/3 part of the pie crust and make the top crust.  Cut some parts into strips and some into stars.   In 2 bowls, add 1 tsp of red and blue food coloring.  Add 1 tsp of water and mix together like what’s in the picture below.

  

 

Using a pastry brush, brush the blue unto the stars and red unto the strips. 

 

 

Arrange the stars and strips to make the American flag.  Isn’t it pretty!!  It’s not just pretty, it’s also delicious!!  Happy 4th of July from my family to yours!!

Pie Crust
  1. In a large bowl, mix together the flour, salt, chilled shortening and chilled butter and mix together with your fingers. Keep mixing with your finger until the flour is about pea sized.
  2. Gently add the water little by little and mix together. You want the dough to be moist but not too wet.
  3. Divide the dough into 2/3 and 1/3 parts. Take the 2/3 part and roll it out unto a lightly floured surface to 17x 12 rectangle. Fold it into half then quarter and place on a 15x10 jelly roll pan. Then unfold it. Cut the excess with a knife. Chill in the refrigerator while making the filling.
  4. Take the 1/3 part and roll it out. Cut out into long strips and also star shape using a star cutter. Place on a baking sheet and chill in the refrigerator. Preheat oven to 350 degrees Fahrenheit.
Filling
  1. In a medium bowl, mix together the apples, sugar, brown sugar, flour, cinnamon, and salt. Pour the lemon juice and mix again. Take out the chilled pie crust, pour the filling and even out the layer.
  2. Bake the pie for 30-35 minutes, until the apples are tender. Remove from oven and let cool in room temperature.
Top crust
  1. Take out the pie strips and stars from the refrigerator. In 1 small bowl, add the red food coloring and 1 tsp of water. Repeat the same for the blue one.
  2. Using a pastry brush, brush the stars with the blue, and brush the strips with the red. Bake in the oven for 10 minutes and let cool.
  3. Arrange the top crust on top of the pie to look like the flag.
