PECAN SLAB PIE

This recipe will sure feed a crowd!!  Great for summer parties and easy to make!!!  SLAB PIE month is going nuts for Pecan Pie Bars!!!

It’s amazing how one recipe can have a lot of amazing qualities!!   First, it is deeeeelicious!  Second it’s really easy to make.  And third it can feed a crowd!!  Im not exaggerating!! You can make 48 bars out of this recipe. Even more if you are cutting it into smaller pieces.  If that’s not a crowd, I don’t know what is!!

I know when you think of summer you don’t necessarily think of pecan pie, but I think this pie goes for any season!! And if you are a fan of pecan, this foolproof slab pie recipe will make your friends and family happy!!

To make this recipe you will need 2 15x10x1-in. It’s not the common baking pan that most household has.  It needs the 1 inch height so that it can handle the filling.  You can get them at Walmart or Target or Amazon.

In a large bowl, and I do mean a large bowl, mix together the flour, sugar salt.  Then add the butter that’s cut into small pieces.

Using your fingers, mix and cut in the butter so it becomes a crumble.

Put half of the crust into the one of the baking pan.  Use the 15x10x1-in. for this recipe, because the recipe is for this size pan.  If you want to make just 1 pan, you can half the recipe.  Make sure the surface is even by using the bottom of a measuring cup.

Bake the crust in a 350 degrees Fahrenheit oven for 18-22 minutes.  It should be lightly brown and set.  While the crust is baking, we can start making the filling.  In a large bowl, and I mean large bowl, mix together eggs, sugar, corn syrup, butter and vanilla extract with a whisk.

When it’s evenly mixed, add the chopped pecans.

Pour the pecan filling into the crust.

What a sight for hungry eyes!!!  Remember to even out the filling and spread out the pecans so that it will be even layered.

Mmmm … mmm …. mmm …   It smells so good!!  But don’t cut into it yet!!  We need to let it cool and refrigerate it so it will be set.  After it goes in the refrigerator, cut into pieces.

Doesn’t it look scrumptious!!!  This is for sure going as one of my favorite  potluck dessert!!!  Enjoy this delectable Pecan Pie Bars!!!

  1. Preheat the oven to 350 degrees fahrenheit.
  2. In a large bowl, combine the flour, sugar and salt. Cut the butter into the flour mixture until it becomes crumbly.
  3. Press onto the bottom and up the sides of two greased 15x10x1-in. baking pans. Use the bottom of measuring cup to even the surface.
  4. Bake for 18-22 minutes or until crust edges are beginning to brown and bottom is set.
  5. While the crust is in the oven, make the filling. In a large bowl, combine the eggs, sugar, corn syrup, butter and vanilla extract.
  6. Stir in pecans. Pour the filling over the baked crust.
  7. Bake 25-30 minutes longer or until edges are firm and center is almost set. Cool on wire racks. Refrigerate for 1 hour before cutting into bars. Keep in the refrigerator until serving.
