CREAM CHEESE AND BLUEBERRY LOAF

Cream Cheese and Blueberry Loaf!!  So moist, with burst of blueberries, what a wonderful way to start your day!!  CREAM CHEESE month is going to be exciting!!  

Have you ever wonder how they make cream cheese?  And did you know that you can make your own homemade cream cheese?  It’s only needs a few simple ingredients.  Whole milk, cream, lemon and salt.  Simple, right?!  Maybe I can try making a homemade cream cheese next time!!

 

And you know what else goes with cream cheese?  Bagels!!  One of our favorite place to get bagels in Einstein bagels.  They have a variety of different flavored cream cheese and it’s really delicious!!  It’s a little bit different in consistency like the block cream cheese because theirs is whipped.  So it’s lighter and mmm.. mmm.. good.  It does makes your mouth waters, but for this month, we are going to use the block cream cheese that you usually see at the store.  

In a stand mixer or using your handheld mixer, cream together the butter cream cheese and sugar.  I like to cream the butter for about 3-5 minutes until the butter is light and fluffy.  

Add eggs one by one and mix well after each addition.

Add both the lemon zest and lemon juice and mix again. 

  

Then add the vanilla extract. 

While the machine is on, add the flour, baking powder and salt mixture into the bowl.   Mix well but be careful not to over mix.

Then I like to take the bowl out of the stand mixer and do the next process by hand.  Pour in the blueberries that has been tossed in flour and use the spatula to mix the blueberry in.  

Divide the batter into 2 9×5 loaf that’s been greased.  Try to make sure that they are evenly divided.

Bake it for about 60-70 minutes until the inserted toothpick or skewer comes out clean.  Let cool on a wire rack for about 10 minutes then take it out of the pan. 

Oh … when you take it out of the oven, your house will smell so good!!  Great for afternoon tea or for breakfast!!

Instructions
  1. Preheat oven to 350 degrees F. Grease 2 9x5 loaf pan with butter.
  2. In a small bowl toss blueberries with 2 Tbsp flour. Set aside.
  3. In a medium bowl combine the flour, baking powder and salt. This is the dry mixture.
  4. In a stand mixer bowl cream together butter, cream cheese, sugar and vanilla. Add eggs, one at a time, beating well after each addition.
  5. Slowly add the dry mixture into the creamed butter until everything is combined.
  6. Using a spatula fold in blueberries. At this stage using a spatula is better to keep the blueberry whole.
  7. Pour batter equally into the loaf pans and baked for approximately 60-70 minutes or until a toothpick inserted into the middle of the loaves comes out clean.
  8. Let rest on wire rack for 10 minutes. Invert the bread onto a wire rack so it will become completely cool before slicing into it.
