MALVA PUDDING

Decadent, delicious and rich!   Oh and invite people over because you might not be able to stop eating it!  Let’s start INTERNATIONAL BAKE GOODS month in South Africa with Malva Pudding!!

Here’s to a fun month!!  I love learning about other countries especially their desserts!!  This month, I’m going to take you around the world and go to 4 different countries and bake their desserts!  With each countries, I will share with you 5 fun facts that I learned about the country then I’ll share their dessert.

Here are 5 things that I learned about South Africa :

  1. It has 3 capital cities, which are Cape Town, Bloemfontein, and Pretoria.  Now I just found out that there are many nations that has more than 1 capital cities.  But South Africa is the only one that actually have not just 2, but 3 capital cities.  Who knew!
  2. This country has 2 noble prize winners that lived in the same street!! His Excellency Nelson Rolihlahla Mandela and The Most Reverend Desmond Tutu.  It’s actually the only street in the world to have not just one, but 2 famous people lived in it!!
  3. It has the longest Wine Route in the World.   I tasted a South African wine from my South African wine and it was delicious!!  Mmmm ….  This place should be on my bucket list!!
  4. It has 11 official language.  To say thank you in Afrikaans is Dankie!!
  5. Last but not least, the world’s largest diamond was found in Pretoria.  It was the largest colorless cut diamond and you can find it  on top of the Queen of England’s Septre with the Cross.  Google it!!!  It’s a beaut!!

Now I have to tell you that I am soooooooo happy, ecstatic and so lucky that I found this recipe.  It is rich and delicious and it’s really hard to stop eating it.  It might just look like a regular pudding, but once you have a bite, you’ll see that it is far from ordinary!!

Now, to make it let’s start with with whipping the butter and sugar.

Then add the eggs one by one and mix again.

Add the apricot jam and mix.

Add the baking soda and mix.

Add the milk and mix again.

Add the vinegar and mix again.

And finally, add the flour and mix until everything is thoroughly combined.

Pour in a greased baking dish and bake it for 45 minutes.

Now for the happy sauce!!  Why happy sauce??  It’s because you will be soooooo happy when you eat this pudding with the sauce.  It is imperative to make it.   Please do not skip this step!!!  And the best part??  Just put all the ingredients into a saucepan and boil.  That’s it!!

After the pudding is ready, poke the pudding all over with a skewer.  Poke away….  Left right center and all around.  That way the happy sauce can seep in and make this pudding delicious!!

Then pour the happy sauce all around the pudding.  Let it seep for about 15 minutes before serving.

Whooaaaa Momma!!!  One bite of this and you are going to be hooked!!!  What an amazing way to start International Bake Goods Month!!

Instructions
  1. Preheat oven to 350 F. Grease a 2 quart baking pan with butter.
  2. Whip butter with sugar for 2 minutes. Add the eggs one at a time and continue to whip until it's all combined.
  3. Add the apricot jam and mix well.
  4. Then, add the milk and the baking soda, then the vinegar.
  5. Add the sifted flour gradually and mix until it's thoroughly combined. Do not overmix
  6. Pour in the prepared baking pan. Bake for 45 minutes in the oven or until an inserted toothpick comes out clean.
  7. While the pudding is baking, mix all the sauce ingredients in a medium saucepan on medium/high heat.
  8. Bring to a boil and be careful not to burn it. Remove from heat and cover.
  9. Remove the pudding from the oven and prick all over with a skewer.
  10. Pour the sauce on top. It will pool a little bit in the middle so keep on pricking it with the skewer some more so the sauce will seep in.
  11. Set aside for 15 minutes before serving so that the cake has time to absorb the sauce.
