It’s not summer until we have a S’mores Recipe!!! For our final SLAB PIE month, here the delicious, chocolatey and easy to make S’mores Slab Pie!!
When is your first memory of your first S’mores? Mine was when I was in middle school and I went to camp (I grew up in Indonesia and moved to states when I was in Middle School). When I had it, I was amazed!!! What is this amazing combination of flavors!! It was something I’ve never had before!! And now when I have it, it always brings me back to that time of my life.
So when I looked for inspiration to make a summer slab pie, the flavors of a S’mores comes to mind. Why not make a S’mores in a slab pie form?? And voila!!! S’mores Slab Pie!!!
Now this S’mores pie crust is the easiest crust out off all the crust that we’ve made. All you have to do is mix the graham cracker crumbs, sugar and butter together in a medium bowl with a fork or your fingers.Press evenly to the bottom and up sides of pan with the bottom of a measuring cup. Bake 10 to 14 minutes or until you see the crust is set. Let cool for 10 minutes and in the meantime, you can make the pie filling.
Back then, you have to get graham crackers and whack it and whack it away. You might get big pieces if you don’t whack enough. But now, lo and behold, the Graham Cracker CRUMBS!!! It’s awesome!!! Save time and save the mess!!! But of course if you still want to get some aggression out, go ahead with the good ol’ Graham crackers! ?
Let’s make the delicious chocolate pie filling!!! So I am not the biggest fan of chocolate (I’m more of a pastry lover!!) but WOW this chocolate filling is really really delicious!!! And so easy to make too!!
Whisk together the sugar, cornstarch, and salt in a medium saucepan.
Pour in milk and egg yolks, and whisk together.
Keep stiring over medium heat (not High heat because the bottom might burn before it becomes thick) for about 5-7 minutes. Stay close to the stove because you want to be there when it thickens up.
Add the chocolate and vanilla and stir again.
Then add the butter, and stir until everything is beautifully combined. It’s nice, and thick and really chocolatey!!!
Pour the pudding into the pie crust (if there is extra, spoon it into small dishes and have it for snack!!!) and place in the fridge to chill for 4 hours uncovered.
Whoaaaa Momma!!! Aren’t you a sight for sore eyes!! But you’re not done yet!!! The best part is yet to come!!
Spread the mini marshmallow on top of the filling. You know what comes next!!!
Torch away!!! It took awhile to do the whole pan with the blow torch, so I thought maybe I should broil it in the oven. But then I remember about the chocolate filling!!! It will melt!! So no oven, only torch!!

- 4 1/2 cups finely crushed graham crackers
- 18 tbsp butter melted
- 3/4 cup sugar
- 3 cups sugar
- 1/2 cup cornstarch
- 1/2 tsp salt
- 6 cups milk
- 8 egg yolks
- 12 oz bittersweet chocolate, chopped finely
- 4 tsp vanilla extract
- 4 tbsp butter
- 1 lb mini marshmallows

- Preheat the oven to 350°F. Spray a 15x10x1-inch pan lightly with cooking spray.
- In medium bowl, mix the graham cracker crust, sugar and melted butter with a fork or your finger until it's well blended. Press evenly in bottom with the bottom of a measuring pan. Push it all the way up sides of pan.
- Bake 10 to 14 minutes or until set. Cool 10 minutes.
- Whisk together the sugar, cornstarch, and salt in a medium saucepan.
- Add milk and egg yolks, and whisk again.
- Stir over medium heat until the mixture just barely comes to a boil and becomes thick, about 6-8 minutes. Remove from heat.
- Add the chopped chocolate, vanilla, and butter, and stir until everything is thoroughly combined.
- Pour the pudding into the pie crust and place in the fridge to chill for 4 hours uncovered.
- After the filling is set, spread the mini marshmallow on top of the chocolate filling. Using a mini blow torch, toast the marshmallow. Cut into squares.
