STRAWBERRY SHORTCAKE SHOOTERS

Have you ever had a shot glass dessert?  It’s a way to satisfy your sweet tooth but with less of the calories!   It’s also a way to try new desserts without having to eat a huge serving of it.  There are many recipes that you can put in a shot glass, like, mousse, cheesecake, tiramisu, and so many other delicious desserts.  But for now, we are making Strawberry Shortcake Shooters.  It has soft and sweet strawberries, fluffy homemade whipped cream, and flaky biscuits that is the perfect combination for this amazing shooters.

So this dessert has 4 parts in it.  It really doesn’t take a long time, but it does have quite a few parts to it.  First you make the strawberry filling.  You do need to do this first so that the strawberries will soften and the sugar will seeped into the fruit.  The second part is to make the biscuit.  After you put the biscuit in the oven, you will do the third step which is the homemade whipped cream.  Once you make the whipped cream, you’re almost at the finished line, because the last step is to assemble and then eat it!

 

 

Making the strawberry filling is really simple and only needs two ingredients, Strawberries and sugar.  If you are making just the usual shortcake you don’t need to cut it into small pieces, just cut into halves or quarters.  Since I am going to put it in cute shot glasses, i cut them into small pieces.  This step has to be first because you do need some time to let the sugar soaked in the strawberries to make it sweet and juicy.

 

 

The biscuit.  Let me tell you, I was not patient when the biscuit was done.  I pulled it apart and the smell was just divine.  But it was so hot!  So please don’t do what I do and be patient.  You do want to let this cool off so it will be set and not to hot to eat.

I know that you can get whipped cream all ready to go from the store.  But trust me, homemade whipped cream is worth the time and the cleaning of the bowl!  It’s really simple to make and once you try it, you probably don’t want to go back to the ready-made whipped cream.

Tips for making this Strawberry Shortcake shooters:

  • Do the steps exactly as written.  Each step is put in its order so that everything will be ready to assemble at the perfect time.
  • When making the whipped cream, do not leave the mixer.  It just takes a few seconds to ruin it.  Be patient and really watch the process until you get a soft peaks form.

Strawberry Shortcake Shooters
This dessert is cute and delicious! You can make this in a shot glass or make it into a sandwich with a strawberry and whipped cream filling.

Instructions
The Strawberries
  1. In a bowl, mix together the strawberries and sugar. Put in the refrigerator for about 30 minutes.
The Biscuit
  1. Preheat oven to 425 degrees Fahrenheit. Line baking sheets with parchment paper.
  2. Place the buttermilk in a large measuring cup into a freezer for 10 minutes. After the buttermilk is cold, add butter into the cup and stir.
  3. In a large bowl, mix together the flour, sugar, baking powder and salt.
  4. Add the buttermilk mixture into the bowl and stir together gently with your hand. Do not overmix.
  5. Sprinkle flour onto a clean surface. Place the dough on it and pat to a 1 inch thick rectangle.
  6. Fold the dough like a letter (into thirds) and pat to a 1 inch thick rectangle. Cut into small squares and place on baking sheet.
  7. Bake for 13-17 minutes until the top is golden brown. If you are making the shot glass, you will have extra biscuits.
The Whipped Cream
  1. Put sugar in a food processor or a chopper until in becomes fine, not powdered, in texture. About 1-2 minutes.
  2. In a bowl of a stand mixer, combine heavy cream, fine sugar and vanilla on a low speed for about 1 minute. Then increase the speed to medium and whip until soft peak.
