SWEET DINNER ROLLS

When you bite into this freshly baked dinner rolls, I guarantee that the first word that’s going to come out of your mouth is “Mmmmmm…..”  So light, so easy to make, and so Fluffy!!  Celebrating my BIRTHDAY month will all my favorites!!  Dinner rolls, here we come!!

 

 

I love my birthday month!!!!  This is the time where I get to bake all my favorite things aka my kryptonites. ?  I love bread.  Especially the sweet ones.  Every time we go out to eat and they have bread, it’s very hard for me to resist.  For other people, it’s chocolate that makes them happy but for me it’s bread.  One of my favorite bread of all time is dinner rolls.  I’ve searched high and low for a great dinner roll recipe that is sweet, fluffy and easy to make and I think I finally found it!

This recipe by The Food Charlatan is really fool-proof, easy to make (especially if you have a stand mixer) and the ingredients are not complicated.  Well, I take that back.  Yeast is a category within itself.  I’m always excited to see a bread recipe but whenever I see yeast I usually swipe to the left.  But if I have learned anything from doing this blog, is never say never!!  And I’m so happy that I kept trying because now I can enjoy this delicious and fluffy roll!!

The common yeast that we find in the grocery stores are Active dry yeast and Instant Dry Yeast.  The one that we are going to use for this recipe is the active dry yeast.  I like using the packets instead of the glass jar or the big bag because the yeast is more fresh.  Unless you like to bake breads a lot, I would suggest getting the packets.  This recipe uses Active dry yeast.  To activate the yeast you will need warm water.  Heat up the water in a microwavable mug then add the yeast and sugar.  Make sure you put a timer for 5 minutes because if you forget about it, it will grow and overflow!!!  Here is the picture before ..

In a stand mixer bowl, add sugar, salt, flour and butter.  At this stage, you can use a wooden spoon.

 

 

Add the yeast mixture (look at how it’s almost overflowed!!), warm milk and egg into the flour mixture.  At this point you want to use your dough hook attachment.

 

 

After it’s all mixed together, add 1 cup of flour (up to 3 1/2 cups of flour) each time and mix completely.  The dough itself will be sticky.  Knead the dough until it all comes together.

 

 

In a buttered large bowl, pour out the dough and turn so that all the surfaces will be covered with butter.

 

 

Cover with a clean tea towel and let rise for about 1 hour.  I like to leave it in the  oven so there will be no draft. Yeast likes warmth, just like me!!

 

 

After 1 hour the dough will rise and spread out.  Punch it down and pour it out onto a floured surface.

 

 

Put flour on top of the dough so it will be easy to handle and not too sticky.  Divide it into 24 and make into balls.

 

 

You want to take a little piece and put it unto a lightly floured surface. Sprinkle more flour on top and pat it down to make a small circle

 

 

Bring it all together and pinch it to make a ball.

 

 

Put it on greased baking pan and leave some space because when we do the second rise, it will puff up even more!

 

 

Look at how fluffy it is!!  And this is why we need some space!!

 

 

After the rise, preheat oven to 375 degrees F and bake for 12 minutes.  Brush melted butter on top for extra deliciousness!

Tips for making this Sweet Dinner Rolls:

  • Make sure to watch the yeast when it grows.  I like to use the timer so I don’t forget!
  • If you are making this for dinner, make sure you have plenty of time for the 1st and second rise.
  • The rolls are good for about 2-3 days.

Sweet Dinner Rolls
Fresh rolls is always a hit!!! This dinner rolls recipe is easy to make and will be a hit for the whole family!
Instructions
  1. In a microwavable mug, heat up the water for 20-25 seconds until lukewarm.
  2. Add yeast and 2 tsp sugar and stir. Set a timer for 5 minutes. This is the time it takes for the yeast to grow. Watch so that it will not overflow. This is the yeast mixture.
  3. In a glass measuring cup, microwave the the milk for 1 minutes until warm.
  4. In a stand mixer, mix together the 2/3 cup sugar, salt, butter and 2 cups of the flour. Stir this with a wooden spoon.
  5. Add the warm milk, yeast mixture and 1 egg. Mix well and rest 5 minutes.
  6. Put on the dough hook attachment. While the mixer is on low, add 2-3 cups (up to 3 1/2 cups) of flour, 1 cup at a time. Mix the dough every time you add flour. Knead again for 5-6 minutes.
  7. Grease a large bowl with butter. Scrape the dough and pour it unto the bowl. Turn the dough so that all is covered with butter.
  8. Cover with tea towel. Let rise for about 1 hour. Grease 2 9x13 pan with butter.
  9. Punch down the dough. Divide into 24 equal pieces and shape into balls. Divide the rolls into the 2 pans. There should be 1 cm space between rolls for it to rise.
  10. Cover with tea towel. Let rise for about 45 minutes until doubled in size. Preheat oven to 375 degrees F.
  11. Bake for 12-15 minutes until golden brown. Remove from oven and brush the melted butter.

    I love the look of these. There’s nothing better than an old-fashioned soft dinner roll, especially when you serve them with a roast, stew, chili, etc. And at Thanksgiving, of course. Thanks for reminding us.
