SWEET POTATO SOUFFLE

Looking for a last minute recipe to bake for your Thanksgiving Dinner? Look no more!! Here’s an easy pie that is easy to make, only 6 ingredients, and 100% clean plate guarantee!!! Sweet Potato Souffle!!

Hello last minute bakers!!!! ??? If you are invited to a Thanksgiving dinner and you don’t know what to bring, here’s a fast and easy recipe for you!!  And I have to tell you that this is one of my favorite recipe of all time.  But I try not to make it often because it’s too much of a temptation for me!!  I loooooooooooovvvvveeeee it!!!  I do need that many o’s to tell you how much I love it!!

I first tasted this recipe from my sister and I was hooked!!!  (Thanks, Sis!!? I love you!!!) Her boys loved it too so whenever she made this recipe, she always makes 4 pan.  You know why?  Because each member of the family eats one pan by themselves!!!  That’s how good it is!!!  It’s sweet, it’s crunchy, its delicious, and it’s even more delicious the next day!!!

Another thing I love about it is it only needs 6 ingredients.  Sweet potato, sugar, brown sugar, eggs, cornflakes and butter.  Really simple, right!!  So before reading the rest of the post, run to the store and buy the ingredients now!!!

Here are the steps to make this yummy Sweet Potato Souffle.  Boil 2 cups of sweet potatoes for about 15-20 minutes.  To check if it’s ready, pierce it with fork and it should be soft and fall apart.   When it’s ready, put it in the stand mixer bowl.  Turn it on for about 10 seconds so that it will be mashed.

Add the brown sugar and mix again.

Add the sugar and mix again.

Add the eggs one by one and mix again.

Add the butter a tablespoon at a time and mix again.

Pour into a greased pie pan.   Bake for 30 minutes and take it out to pour in the topping.

To make the topping, crush cornflakes with your hands.  Or if you have little helpers, they can do this job for sure!!!  Then pour the melted butter and mix together.

Pour the topping on top of the sweet potato souffle and bake again for 20 minutes.

My oh my!!!  What a beauty!!!  I love this dessert so much I could eat the whole plate by myself!!  Not in one sitting of course but maybe throughout the day.  ?I hope this recipe makes it to your Thanksgiving Table tomorrow!!

Instructions
  1. Boil the sweet potatoes in a pot for 15-20 minutes until soft.
  2. Preheat the oven to 350 degrees Fahrenheit and grease the pie pan with butter.
  3. When the sweet potato is ready, put it into the stand mixer bowl.
  4. Turn on the mixer for about 10-15 seconds to mash the sweet potato.
  5. Add the sugar and mix together.
  6. Add the brown sugar and mix again.
  7. Add the eggs one by one and mix again. Make sure to scrape the sides.
  8. Add the butter a tablespoon at a time. Mix again until everything is combined.
  9. Pour into the prepared pie plate and bake for 30 minutes.
  10. In a medium bowl, mix the cornflakes and butter together.
  11. Put it on top of the pie pan and bake again for another 20 minutes.
