THUMBPRINT COOKIES

Pointer cookies.  Okay .. When you are reading the title of this post, you might go “Huhhh?” and tilt your head a little.  Well, let me explain.  This recipe is really a Thumbprint cookies recipe.  It’s a popular cookies that you’ll find in lots of cookbooks.  It is a simple recipe and it is one of those cookies that is fun to make with you kiddos.

Now, why is it a Pointer Cookie?  No, it’s not named after the Pointer sister. 🙂  It’s because whenever I used my thumb, the cookie would just get smushed (Not smashed just smushed.  Totally different 🙂 ). It breaks the side and it’s not so pretty anymore.  So I thought to myself, maybe my thumb is too big.  Time to call in the reinforcement.  I had my youngest son to do it for me with his cute little thumb.  It’s still smushed!

Now, I have 5 fingers on each hand.  So I tried all five of them and see which one will not smushed and the winner is …  the Point Finger.  It still makes the well where you will put the jam and the sides are still pretty.  And that is why it’s called Pointer Cookies.  Wow, what a story for a simple cookie!

It’s really easy to whip up the batch but usually takes awhile to roll, make a well and put in the Strawberry.  So I usually set some time to do it and turn on my favorite show so it doesn’t feel like it’s taking a looooongggg time.  As for the filling, you can really put anything on it.  I’ve seen raspberry jam, lemon curd, really anything your heart desire.  But my favorite is this classic recipe with strawberry jam.  Next time, I think I’ll try this Red Velvet Thumbprint cookies.

I usually make this cookies for Christmas.  It has a festive red color with the Strawberry jam and it lasts throughout the holiday season.  It’s also a hit as Christmas gift!  I know Christmas is still 252 days away but let’s plan ahead everybody!!  🙂

Tips on making this cookies:

  • Use a small ice cream scoop.  I like bite size because it’s quite a sweet cookie.
  • When you roll the cookie into a ball, don’t roll all the batch and then make the batch.  Roll and then make the well right away.  The heat from your hand makes it easy to make the well without breaking the shape of the cookies.

THUMBRPINT COOKIES
This buttery, melt in your mouth cookie will be something that your family will enjoy. The strawberry jam can be replaced with so many different flavors. Very simple to make and it just uses the stuff that you already have in your pantry.

  1. Preheat oven to 350 degrees Fahrenheit. Line 2 baking sheet with parchment paper.
  2. In a stand mixer, mix together egg yolk, sugar and butter.
  3. Add flour slowly until fully mixed together.
  4. With a small ice cream scoop, scoop batter and then roll into a ball.
  5. Put the ball onto parchment paper and with your point finger make a well in the center of the cookie.
  6. Fill the well with Strawberry jam.
  7. Bake 15 - 18 minutes.
  8. Wait until completely cool before eating because the jam will be hot.
