CRISPY CHEWY MAPLE COOKIES

It really is crispy AND chewy!!  First bite is crispy but then it’s chewy and maple-y!!  Here’s the Crispy Chewy Maple Cookies for THANKSGIVING DAY month!!

I need to start by saying, I love this cookie!!  It’s very unique because of the maple syrup.  It has a different kind of sweetness and when you open the oven, oh my it smells soooooo good!!!!

THANKSGIVING DAY MONTH.  What a mouthful, right!!  This month we are doing recipes of things that you could bake up during your Thanksgiving day.  Here’s a picture of all the ingredients that you will need for the whole day.

I counted and we only need 16 ingredients!  And you probably already most of the ingredients so Yay!!!  Last week I shared Overnight Texas toast Casserole.  Easy to make and you can make it ahead.  This week is this Crispy and Chewy Maple cookies.  This is a recipe that you can also make ahead so that you can save time on prep and just bake it on Thanksgiving day.  I think this cookie would be a great snack to eat while watching football!  Great for the kids and adults!

Making this cookie is not like other cookies where you first cream butter and sugar, add eggs and vanilla extract, add flour and bake.  So please read all the instructions first before you make it.

First you combine together sugar, brown sugar, maple syrup, baking soda, cream of tartar and salt.

Add 1 egg and 1 EGG YOLK.  Make sure to not add 2 eggs.  Mix again.

Add the vanilla extract and mix again.

Then add the dry ingredients and combine until everything is mixed together.

After chilling, it’s time to rock and roll!!  I mean scoop and roll!!  ?  Using a small ice cream scoop, scoop out the dough, roll it to make a ball, then roll it again in the cinnamon sugar.

This cookie really expands so make sure you give lots of space around it.  When I made the first batch, I put 8 cookies on each baking sheet, which is the usual number.  But it got so big during the baking that it touched each other.  So for the next one, I only put in 6 per sheet.

 

After about 12 minutes, take them out of the oven and let cool.  Then drizzle the maple glaze on top and ……..

voila!!!  Purrrrrttyyyy and deeeeeelliiiiiicious!!!  I hope you enjoy making them and eating them too!!  ? ? ? ?
