MERINGUE COOKIE TOWER

Pink Rossettes everywhere!!!  A delicious and beautiful Meringue Cookie Tower to celebrate BIRTHDAY month!!! 

 

 

Pretty in pink!!!  I went all pink for this dessert because I think it fits into the rosettes design.  I love how you can shape meringue cookies into any shape and any color.  It’s a really versatile thing to make. And you can make it ahead of time.  That way you can make it ahead of your event and then assemble it on the day of the event.

 

Making this tower needs the help of foam cone.  And foam cone comes in many shapes and sizes.   So you can use a mini one if you want it for a small crowd, or you can use a large foam cone if you were feeding a crowd.  It’s a matter of reducing the recipe or doubling the recipe.  I would always bake more than needed because this is a great cookie for snack.  So the more the merrier!!  I bought mine from Hobby Lobby, but you can also get them from any arts and crafts store.  

 

 

Wrap the cone with tissue paper that will be the color of rosettes.  We need to do this so that the cookie won’t touch the foam and it will match the color of the cookie. 

 

To make the meringue, you will start with a stand mixer with the wire attachment.  Beat the egg whites and salt until it becomes foamy.

 

 

Add the cream of tartar then beat again until it becomes soft peak form.  

 

 

While the machine is on, add the sugar 1 tablespoon at a time.  Then keep beating until it becomes stiff peak. 

 

 

It should look glossy and if you tilt your stand mixer, the egg white should stay on your whisk.  

 

 

Add the vanilla extract.  

 

 

 Then add the food coloring.  Mix it well and scrape the sides so that it will be thoroughly combined.  

 

 

Pipe it into rosettes and bake for 1 hour.  Leave it in the oven for another hour to dry.  Then take it out and leave it on the pan for another hour. 

 

 

Assemble the cookies on a foam cone with the help of toothpicks.

 

 

Wouldn’t you want to have this for the your next celebration?!?!  I would!!!  And it doesn’t have to just be for birthdays.  It can also be for wedding, Christmas, retirement party, housewarming party, any event you can imagine!!  I love it !!!

  1. Preheat oven to 225 degrees F. Line cookie sheet with parchment paper. Set aside.
  2. In a stand mixer bowl and using the wire whisk, beat the egg whites and salt until it becomes foamy. Add cream of tartar and beat until soft peak form.
  3. While the mixer is in low speed, add the superfine sugar 1 tablespoon at a time until it's all mixed in. Keep mixing until the egg whites becomes a stiff peak form.
  4. Add the vanilla extract and pink food coloring and mix evenly. Use a spatula to scrape the sides to make sure all the colors are mixed in.
  5. Pour in a pastry bag with a rosette tip and pipe it on top of the parchment paper.
  6. Bake for about 1 hour. Shut off the oven.
  7. Leave the meringues in the oven to dry out.
  8. After it's cooled, store in an airtight container.
