PEACH BUCKLE

Here’s a great way to make use of your cast iron skillet!  This Peach buckle recipe is great dessert to make and I guarantee it will be everyone’s favorite!  PEACH month is so crispy and delicious!!

 

 

Before this recipe, I thought that cast iron is used only for cooking and maybe cornbread. But now I’m going to use it for many more dessert recipes!!  It’s good for making a good crust, it provide even and constant heat and it can go into your oven.  Lot’s of plusses in my book!!

Since it is PEACH month, let’s start with the peaches!! When I make this dessert, I like to use ripe peaches.   So I usually buy it about 3 days ahead to let it ripen and sweeten.  To ripen peaches, I usually wrap them in a plastic bag and leave it in the pantry or countertop.  But you have to be careful and check it every day because it can get rotten really easily. For this recipe, I peel the peaches then cut it into slivers.  Some people leave the peel on, because you can eat the peel, but I’m not a big fan so I usually peel it off. Sprinkle about 2 tbsp of sugar to pull out all the juices and to make the peaches sweet.  

 

 

Mix together the flour, baking powder, salt and whole milk into a medium bowl, then whisk until combined.  Then add the melted butter. 

 

  

Pour the batter into your cast iron skillet.  

 

 

Then sprinkle all the peaches on top of the batter. 

 

 

Then sprinkle the turbinado sugar on top. 

 

   

Isn’t it a sight for sore eyes??  Doesn’t it just looks so scrumptious?!?!?

 

 

Then bake it for 50-55 minutes until its golden brown and when a tester in the center comes out clean, take it out and enjoy!!  And if you want to make this Peach Buckle even better, try eating it with whipped cream or vanilla ice cream!

  1. Preheat oven to 350 degrees
  2. Melt butter in a 10-inch cast-iron skillet, preferably enameled, over medium heat. Be careful not to burn it.
  3. Place peaches in a medium bowl and sprinkle with 2 tablespoons granulated sugar. Mix together.
  4. In a large bowl, whisk together flour, baking powder, and salt. Add remaining 1 cup granulated sugar, milk, and vanilla. Combine.
  5. Pour in the melted butter and whisk until well combined.
  6. Pour the mixture into skillet and top with peaches. Sprinkle with sanding sugar.
  7. Bake until top is golden brown and a tester inserted in center comes out clean, 50 to 55 minutes.
